Wow, Winter has certainly hit hard this year. In Queensland, we barely got rid of Summer, and we were scrambling to buy a good wood supply and get out the blankets.
So, with that in mind, I've taken to the blog to pass over my recipe for Golden Syrup Pudding A sure fire way to warm up everyone in your family, like it does to mine!
GREENWOOD FARM GOLDEN SYRUP PUDDING:
1/2 cup (125ml) golden syrup
25g butter, softened
1/2 cup (100g) caster sugar
1 teaspoon vanilla bean paste/extract/essence
1 & 1/2 cups (225g) self-raising flour
2/3 cup (160ml) milk
golden syrup, extra, to serve
Ice-cream or vanilla custard, to serve.
1: In a pudding basin or ceramic dish, pour the first listed golden syrup over the sides of bowl - dont worry, it will eventually drip down to the bottom
2: In the bowl of a mixer (or use hand beaters) add butter, castor sugar and beat until thick and pale
3: Beat in eggs, one at a time and add the vanilla, beat well
4: Sift your SR flour twice and add to the mixture, then add the milk, beat until combined
5: Pour mixture on top of your basin coated in golden syrup and if you have a lid,
put it on top, if not..... cut a piece of baking paper and place on top with a fold in the top (this allows for expansion of the pudding ingredients
6: Bake in a hot oven 180 degrees for 30 minutes or until your whole house smells divine and the pudding has reached the top of the basin.
7: Upturn the pudding onto a serving plate and pour over more golden syrup. I serve this with our handmade Vanilla Bean Ice Cream and my family ALWAYS come back for more!
Well, there you have it! The best winter warmer dessert I know... id love a dollar for every time I've made it!
