Honeycake Recipe

So you loved our story on The Big Day Out! So many people requested the recipe for the Honey Cake Jess and I made..... So here it is, and I know where you can get Queensland's best, award winning honey!

Greenwood Farm Honey Cake

Jess talked to Paulie about his bees and honey, then we headed into the kitchen to make this gorgeous Honey Cake.

So many of you loved the story and requested the recipe for the cake, so as promised... here it is!

Greenwood Farm Honey Cake


170g Greenwood Farm Honey

160g butter

85g light brown sugar

2 eggs - beaten

200g self raising flour - sifted



55g icing sugar

1 tablespoon Greenwood Farm Honey

hot water

Greenwood Farm Honey


1: Preheat oven to 180c, line and butter a 18cm cake tin

2: Measure the honey, butter and sugar into a saucepan and add a tablespoon of water, heat gently until melted

3: Remove from the heat and cool slightly. Add the beaten eggs and the flour

4: Spoon the mixture into the cake tin and bake for 45 minutes or until the cake is springy and golden

5: Leave in cake tin for 5 minutes, then turn out onto a wire rack

6: Mix all icing ingredients in a little jug, then pour onto top of cake and serve with little cups of tea..... just like we did for Jess!
